Does anybody else struggle with cooking in the summer? Well, tonight we had something that we haven't had in ages. BLT's......I cooked the bacon just right, and diced the tomatoes, so they don't fall off in one big chunk, shredded the lettuce, and of course Miracle Whip (my hubby loves the stuff). Jay even asked for another one when he gets done mowing the lawn. I'm buying more bacon!

YUM YUM YUM. We just had these last week and we wondered why it had been so long since we had made them. Probably because trying to find a good tomato in the winter isn't easy. Summer cooking for me is usually off the grill. I think this year I am going to write down the things we enjoyed eating all summer so next year I don't have to try to remember.
When you do that could you post it for all of us. I don't think we can eat BLT's ALL summer.
I love a good BLT ~ hold the miracle whip ~ but add the mayo!! Plus you have to salt the tomatos... then it's perfect!! I guess I know what's for dinner tonight!
We were having Chef Salad for dinner last night, which is a great summer meal in my book since the only thing that has to be cooked is the eggs. I mentioned that we might be eating this a lot this summer, so Lance piped up and mentioned BLT's. Great minds think alike!

I think you'd rather just have a bacon sandwich. Hey, didn't Dandee Hale order that once when he was with us? A "BLT" with no tomato and no lettuce.
last night... and the night before I tried to say that we were going to have chef salad (complete with boiled eggs, turkey, tomato, cheese, seeds, croutons, radishes, cucumbers, and dressing) and Jason asked what would go with it. after some time explaining that the salad would be dinner he looked at me crazy and said, "Yeah, but what would go with it??"
I guess some people just don't do salad for dinner. maybe I'll make BLTs instead.
I agree with the salad ideas. I have already eaten many "bags" of salad in the last couple of weeks with sliced turkey on it with the extras. I am trying to get all my veggies in before fall and winter because then they never sound as tasty.
